What is Sinamak?
Sinamak is a traditional Filipino spiced vinegar made by infusing vinegar with chilies, garlic, ginger, peppercorns, and other aromatics. Sharp, fragrant, and often spicy, it is commonly served as a sawsawan for grilled, fried, and roasted dishes.
Born from the Filipino Ihawan
Barrio Kusinero takes inspiration from this familiar Filipino sawsawan and gives it a richer, grill-ready character. Roasted vegetables add body, smoky spices bring warmth, and a touch of sweetness balances the vinegar’s natural tang.
The result is a bold, full-bodied sauce made to coat every bite—before, during, or after grilling.
